Bacon Cupcakes with Cream Cheese Frosting!!

I know what you are thinking... BELIEVE ME, I've been there myself!! "Bacon Cupcakes, HOW DISGUSTING!!" Our thoughts couldn't be more wrong! After looking online, these really started taunting me, to the point where I'd salivate just thinking about what they could taste like.
When you want something sweet and salty, this will hit the spot. I'd call 'em "Comfort Cupcakes".
Now I've typically seen these made with chocolate frosting, but I decided to tone it down on my first try, and went for Betty Crocker's version of 'cream cheese'.

Okay, so I didn't have a lot to work with, and in all actuality I felt like a makeshift Paula Dean with the amount of "butter" used.

I used the Hallmark Party Express baking cups... they are so cute.

I cheated and sadly used all prepackaged ingredients- even so, these were a hit!:
* Betty Crocker Super Moist Butter Recipe Yellow Cake mix
* Oscar Mayer fully cooked Bacon

* Betty Crocker Whipped Cream Cheese Frosting
(all I had to do was add 1 1/4 cup of water to the mix, a half cup of softened butter -I just used Country Crock Light, and 3 large eggs.)

I buttered the insides of the cups, that's why they don't look as uniformed/pleated now.
I microwaved the bacon to make it extra crispy, then I poured a tiny bit of batter in 12 cups.
I left 4 pieces of bacon for garnishing the tops.
I broke up the bacon in tiny pieces, put them in the partially filled cups, then poured the remaining batter and filled them practically to the top. (I rinsed the rest of the batter down the drain).
I baked them for 12 minutes, turned the pan around so that they could bake evenly, and baked them for an additional 14 minutes.
They turned out perfectly!

I let them cool for a bit, but then decided to eat them during dinner along with our Shepherd's Pie (homemade mashed potatoes, a layer of creamed corn, 1 1/2 pounds of cooked crumbled ground beef, and another layer of mashed potatoes on top- bake for 25 minutes at 350 degrees).

The cupcakes were semi-cool, and I decided to put the icing on them.
Here is where I wish I would have made homemade, as the icing tasted very commercially. I chose "cream cheese" because I thought "breakfast and bacon".
I would make my own cream cheese frosting next time.
I did mix a tiny bit of Sugar Free Maple Syrup in a tiny bit of the frosting, but decided against it, as it didn't taste much different- except for tasting a little too sweet.

Result:
THEY WERE INCREDIBLE!
They actually emulated the flavor of a McDonald's McGriddle [breakfast sandwich] to a "T"!
I am not even disappointed in the warm commercial frosting on the top.

Well, here are the pictures, please remember I am NOT a Photographer, so I am sure they are awful, but I wanted to prove that even the simplest ingredients can make for an unusual sounding, but amazing cupcake!
